Becoming the Person I Want to Be
Healthy Cinnamon Baked Apples
Ingredients:
- Apple (I used a Gala apple)
- Cinnamon
- Pumpkin Pie Spice
- 0.5 – 1 ounce Chopped Walnuts (or nut of choice) – Optional
- TB Pure Maple Syrup (or Natural Nut Butter of choice) – Optional
Directions:
Preheat oven to 375 degrees F. Remove the core from the apple with a knife. Carefully hollow out part of the apple (don’t remove too much of the inside, just enough to be able to insert walnuts, spices & syrup. Add toppings to apple and place in the oven. Bake approximately 25 minutes or until soft (the length of time will depend on the size of your apple, so make sure to keep an eye on it!) Use a knife to check softness. When the apple is done, remove from the oven and allow to cool (the inside will be VERY hot). I chopped mine up to allow it to cool. Once it’s cool enough, add the maple syrup (or nut butter) and enjoy!

A delicious, healthy and oil-free soup for National Homemade Soup day! Get the recipe for this Artichoke Arugula Soup at Vegan Yack Attack!
Healthy appetizer idea! Almond crusted banana bites! 1. Slice your banana into thin coins, 2. Crack an egg and mix it well in a bowl, 3. Take the banana coins and slather it with egg (just throw them in the bowl), 4. Then turn the eggy coins over in another bowl full of almond flour. If you don’t have any, you can buy almonds and crush then yourself in a blender, 5. Melt coconut oil in a frying pan, 6. Fry the coins, 7. Eat! Have fun and eat well! These are amazing :)

Potato leek soup may just be one of the most amazing and delicious soups of all time. You have the comfort of the potato with the absolute wellness of leeks and garlic. What’s more, it’s so simple. All I really want in the Winter, because I am not a cold weather girl, is to put a bunch of stuff in a pot, transfer it to a blender, puree and just sip.
My friend bouillon came to this party. You can make this oil-free if you opt not to saute the leeks first. I like to because it deepens and complicates the flavors. Click through for recipe.
